This is the sort of recipe to have around when you get one of those calls to say you’re getting visitors in a few minutes… as everyone loves a banana muffin!!
The recipe originally came from an Allyson Gofton muffin recipe book, but has been tweaked a little.
If you were feeling really fancy, some chocolate icing would go well, but these are great as they are.

Ingredients
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup brown sugar well packed
- 150 g butter melted
- 2 tablespoons golden syrup
- 2 teaspoons vanilla essence
- 3/4 cup banana mashed
- 2 whole eggs

Instructions
- Preheat the oven to 220 degrees. Grease muffin tins or use muffin tin liners.
- Sift the dry ingredients together and make a well in the centre.
- Melt the butter and golden syrup together.
- Add the vanilla essence and bananas to the butter mix. Then add the eggs.
- Pour the liquid mixture into the dry ingredients and mix until just combined.
- Spoon the mixture into lined or greased muffin tins.
- Bake for 12 minutes or until a skewer comes out clean.
