Lamb is great during all seasons – when I think of lamb I think of both winter and summer applications. This recipe goes equally great with roast vegetables or a summer salad, so try out both!

Ingredients
- 6 chops Lamb shoulder chops
- 2 tablespoons flour
- 2 tablespoons tomato sauce
- .5 tsp curry powder
- .5 tsp mixed spice
- 1 cup water
- 2 tablespoons brown sugar
- 1 tablespoon vinegar
- .5 tsp ginger
- .5 tsp Mustard
- 2 tablespoons Sherry
- 1 onion sliced
- salt and pepper to taste

Instructions
- Trim all fat from chops and place in an ovenware dish.
- Place sliced onion over top of chops.
- Mix rest of the ingredients together.
- Pour over chops.
- Place lid on dish and leave to stand for 2 hours.
- Bake in slow oven (170 d celsius) for 2 hours.
